Kazakhstan has joined a new interstate standard (GOST) regulating potato chips. The document has also been adopted by Russia, Armenia, Belarus, Tajikistan, Uzbekistan, and Kyrgyzstan.
Previously, there were no unified requirements for the popular snack across these countries, members of the CIS, according to TASS.
What the new standard requiresUnder the new GOST, potato chips must meet specific technical and quality requirements. Ideal chips should be crispy and crumbly, with a characteristic taste and aroma. The rules also regulate appearance, color, and the permissible levels of fat and salt.

At the same time, the standard officially allows certain minor «defects.» Small blisters on chips are considered normal because they form when potato fibers burst during frying. Chips that appear brown due to caramelized sugars are also acceptable, though they may account for no more than 20% of a package’s weight.
Crumbs are allowed as well, but must not exceed 25% of the package.
Limits on fat contentThe standard also sets limits on fat content depending on how the chips are produced.
Chips made from natural potatoes may contain no more than 45% fat, while chips made from processed potatoes or semi-finished products must contain no more than 35% fat.
Why the standard was introducedAccording to Rosstandart, the new rules are intended to harmonize production standards among participating countries.
